Introduction: Paletas - Mexican Strawberry Popsicles

Paletas are a Mexican popsicle made from fresh fruit. On hot afternoons street vendors will have their ice cream carts selling these on the streets to help cool down during the heat of the summer. The fruit usually used are any that are in season including berries, mangoes or bananas. What makes this frozen dessert so special is its simplicity. It requires only 4 ingredients yet is creamy and rich. Get your kids involved and make this super quick and easy dessert for all.

Makes 6- 3.5oz popsicles

Time: 9 hours

Prep time: 10 mins

Freeze time: 8 hours 50 mins

Supplies

6 Popsicle Mold

Food processor or knife

Step 1: Ingredients

  1. 8 oz strawberries, washed and stems removed
  2. 1/4 cup sugar
  3. 1 cup whole milk
  4. 1/2 cup heavy cream

Step 2: Crush Fruit

In a food processor pulse the strawberries into a chunky mixture.

If you don't have a food processor, use a knife and roughly chop the berries and smash some using the side of the knife.

Step 3: Sweeten

Add the sugar to the strawberry mix. Use a whisk to stir until sugar has dissolved. About 2-3mins

Step 4: Dairy

Add in the cream and milk and stir till combined

Step 5: Fill

Fill your popsicle molds and place the handles in.

Freeze for atleast 8 hours.

Step 6: Enjoy

Let the popsicle thaw for about 5 mins to release it from the mold. If you're anything like me, I get impatient and rub the sides with my warm hands. That gets it out even faster. :D
