Introduction: Peppermint Chewy Cookie Thins

These cookies are the perfect holiday treat. It is a perfect blend of a chewy cookie on the inside, but slightly crunchy on the outside. The peppermint flavor really works well in these cookies, too. Peppermint Chewy Cookie Thins are a perfect addition to any holiday tradition and they're easy to make. 

Make sure to make a large batch as these Peppermint Chewy Cookie Thins won't last long with the family over for the holidays! :)

Step 1: Ingredients

For this delightful chewy cookie, you will need:
  • 1 1/4 cups plus 1 teaspoon confectioners' sugar
  • 1 cup (4 ounces) finely ground blanched almonds
  • egg whites from 3 large eggs
  • Pinch of salt
  • 1/4 cup granulated sugar
  • 1/2 teaspoon peppermint extract

Step 2: Mixing the Dry Ingredients

Preheat the oven to 298 degrees Fahrenheit. In a medium bowl, combine the confectioners' sugar and ground almonds. Sift the entire mixture together. 

Step 3: Mixing the Egg Whites

In  an electric mixer, with the whisk attachment, whip egg whites with salt on high speed until slightly foamy. Then gradually add granulated sugar and continue mixing. Mix until the egg whites make a medium peak (see picture). 

This is also the step to add the peppermint extract and food coloring (which is optional). 

Step 4: Folding in and Preparing

With a rubber spatula, gently fold in the confectioners' sugar mixture (a little bit at a time) until fully incorporated. I suggest alternating between folding and scraping the sides. 

Line a cookie tray with parchment paper; set aside. Fill a large Ziplock bag with the mixture. Cut a 1/2 inch tip.


Step 5: Baking

Pipe the mixture in circles onto the parchment paper. Make sure to leave 2 inches between cookies (the batter will spread a little). Keep in mind these cookies are supposed to be thin. 

Let the cookies stay at room temperature for 15 minutes.

Bake for 15 to 20 minutes on the third rack of your oven. Be careful not to burn them (keep a close eye on them). Once done baking, wait until the cookies are cool and remove from parchment paper. Enjoy! (You can even cut them out into shapes!)

Step 6: Finish!
