Introduction: Persian Ginger Bread

This is traditional Iranian gingerbread! It is super fluffy on the inside. It's super delicious, and we eat this for breakfast with feta cheese and walnuts.

Supplies

-2 cups of bread flour

-5 ounces of water

-1/2 cup of yogurt

-1/3 cup of liquid oil

-2 eggs

-4 tablespoons of butter

-2 tsp of instant yeast

-1 tsp of salt

-2 tsp of sugar

-2 tsp of ginger powder

-1 tsp of fresh ginger

-1 tsp of cream or yogurt

-any circular cutter

Step 1: Mix Ingredents!

First, we mix all the dry ingredients.

After we mix our dry ingredients, we add 1/2 cup of yogurt, 1/3 cup of oil, 2 eggs (2 egg whites and one yolk), 4 tablespoons of butter, and grated ginger. We should mix again and gradually add water as we're mixing.


Step 2: Shaping the Dough

After we are done mixing, take out the dough and start kneading it for about 15 minutes. Make sure you only knead the dough until it loses its stickiness and avoid adding too much flour. After kneading the dough, cover it with a cloth and let it rest for 10 minutes. After 10 minutes, separate pieces of the desired size. Personally, I like to shape them into a small, circular shape (preferably 80–90 grams). Then we knead again. The dough is then covered with cloth for another 10 minutes.


Then, after 10 minutes, spread the dough on the oven tray in the shape of a circle and cover it. Let it rest for 20 minutes.

Step 3: Design

After 20 minutes, we create deep designs on the dough with a cutter, a cold roller, or any other tool, and this time we rest it for half an hour.

Step 4: Bake

After we make our design, we make a napkin with egg yolk and cream or yogurt and spread it on the dough with a brush. We bake our bread in the preheated oven at 200 degrees for 15 minutes. When it's baked, we take it out and enjoy it! We like to eat it with walnuts and feta cheese, like a traditional Iranian breakfast! :)
