For summer weddings, how about serving a delicious frozen desserts for friends and families. It would be a fun idea and perfect for this scorching weather . In this instructables, I am gonna share a layered frozen treat, Mango Chia Pudding Popsicles.

It is simple to make, healthy and tastes great...The bottom layer is pure mango puree and top layer is chia pudding which is consisting of almond milk, chia seeds, maple syrup. Instead of freezing them in Popsicle mold, you just layer it in mason jar/serving glass and serve immediately. Perfect treat for this hot weather, try and enjoy it.

Step 1: Ingredients

1 cup frozen or fresh Mango
3 tbsp chia seeds
1 cup almond milk/coconut milk
1 to 2 tbsp of honey/maple syrup

Step 2: Method

Take mango in a blender, puree them and set aside. (add a tbsp of water if necessary while blending. The puree consistency should be thick, so that it can form layer)

For chia pudding, add chia seeds, milk and sweetener in a bowl and mix well. Let it sit for an hour. After the given time, the chia seeds will appear transparent and jelly type of consistency. Chia pudding is ready! Now it's time to layer them in a popsicle mold.

Take popsicle mold, add 2 tbsp of Mango puree in all molds and then add some chia pudding on top of the puree.

Gently place the popsicle sticks in mold and freeze it for about 4 hours or overnight.

Yummy frozen treat is ready!
