Introduction: Quinoa Bean Salad
This colourful quinoa bean salad is one of my favourite recipes for summer.
It's perfect for bringing to a potluck or your next BBQ.
Step 1: Ingredients
For this salad you'll need:
- 2 cups quinoa
- 1 red bell pepper
- 2 jalapeno peppers
- bundle of green onions
- 1 can (540ml) chickpeas
- 1 can (540ml) black beans
- 1 can (540ml) mixed beans
- 400g feta cheese
- ½ cup vinegar
- ¼ cup olive oil
- 4 tbsp lime juice
Step 2: Mix It Up & Enjoy!
Cook the quinoa (put the quinoa in a pot with 4 cups of water and bring it to a boil then cover and cook on low for 15 minutes).
Cut the vegetables and cheese into small bite-sized pieces.
Rinse and drain the beans.
Mix all the ingredients in a large bowl.
Let sit for 15 minutes before serving.

What a great recipe! ~ Perfect to make with Summer Barbecues or just a nice lunch or light Supper on it's own! I will be making this salad soon... Your presentation is great, the instructions are very thorough and complete! :)
