Introduction: Reverse Sear Steak

Medium Rare Reverse Seared Steak

Ingredients:

  1. Choice of Steak (NY Strip Pictured Above)
  2. Worchester Sauce
  3. Steak Sauce
  4. Onion Powder
  5. Garlic Powder
  6. Pepper
  7. Salt
  8. Butter

  2. Cast Iron Grill
  3. Tongs
  4. Cutting Board
  5. Oven Mitt

Step 1: Wash Your Hands

It is important to start any cooking recipe with a sanitized area and clean hands. Make sure to was with plenty of soap and water. Make sure that cooking area is also clean. Best practice is to have a clean bucket of water with a capful of bleach to use to sanitize cooking area.

Step 2: Stove Prep

In this step you will be preheating the oven to 450 degrees. We will be finishing to cook the steak in here later and it needs to reach 450 degrees Fahrenheit.

You will also need to heat up your cast iron skillet. One way to test if it is hot enough is to place hand about a foot above from cast iron and if it feels warm do a water test. The water test entails of pouring a small amount of water and if it evaporates the cast iron is hot enough.

Caution: Do not touch the cast iron skillet directly. Doing so could cause injury or burns.

Step 3: Tenderize Meat

Tenderize meat by pressing it down with a masher or using a mallet to beat it. This will soften the fibers in the meat helping it become softer and tender.

Step 4: Season Meat

Apply Worcestershire and steak sauce to lather down the steaks. Once fully coated with both sauces, add 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 tablespoon of pepper, 1 tablespoon of salt.

Allow steak to marinate for at least 45 min.

Step 5: Place Steaks in Skillet

Place the steaks on the skillet. Add a cube of butter on top of steaks. Let the steaks sear for 3-4 minutes. This will offer a steak cooked at medium rare.

Step 6: Baste Steak

Basting the steak means to use a spoon to reapply and pour melted butter on top of steak while it cooks.

Step 7: Flip Steak

After 4 Minutes, flip steak and allow another 3-4 minutes.

Repeat step 6 after flipping.

Step 8: Add Steak to Oven

Add steak to oven and let it finish cooking for another 4-5 min.

Caution: Hot temperatures can cause burning. Use oven mitt or heat resistant rag to handle hot skillet.

Step 9: Allow Steak to Sit

Once the allowed time has passed in oven, take skillet out. Remove steak and place it in a clean cutting board or plate. Allow the steak to sit for 5 min. This will allow for meat to settle and juices to be absorbed.

Step 10: Cut and Enjoy

Once steak has sat for 5 min. Cut and enjoy!
