Introduction: Rocky Road | YUMMY VEGAN

This is seriously one of my favourite treat, and it is so easy to make. My vegan and carnivore friends love this recipe. Give it a go and let me know what you think.

150g/5oz/1/2 cup vegan margarine or butter

350g/12oz/1 1/2 cups of dark chocolate (2 large bars)

2 tbsp golden syrup

300g/10oz/1 cup of biscuits of choice (I like using hobnobs or a cheap alternative)

200g/7oz/3/4 cup of vegan marshmallows


Melt the chocolate, margarine and golden syrup in a saucepan on a low heat. You can use a double boiler, or melt it in the microwave. Just be careful not to burn the chocolate. In this video I use a saucepan, but to be honest, using the microwave is the easiest and quickest method.

Put your biscuits in a food bag and smash them with a rolling pin.

Pour the crushed biscuits into your choccy mixture. Stir them in and then add the marshmallows and stir everything together.

Prepare a deep baking tray with some baking paper, and then pour the rocky road mixture into it. Then flatten it out.

Pour some extra mini marshmallows on top and then pop it in the fridge for at least 1 hour.

Once your rocky road has set, you can chop it up into pieces and eat it.
