Introduction: Scotch Eggs

The Scotch Egg consists of a hard boiled egg (I like mine slightly under done) coated in sausage meat and breadcrumbs, and deep fried.
Basically its a British staple of summer time picnic food.
It reminds me of my childhood filled with rainy picnics, sausage rolls and of course Scotch eggs!
It can be a bit fiddly to make and time consuming to deep fry but you can always bake them instead. This is possibly a less indulging experience but it makes for a thinner waist line!
Naturally i would recommend you trying to make it. I think it is always interesting to compare childhood comfort foods. 
 
 
Ingredients: 
 
6 large free-range eggs 
300g sausage meat 
1 tsp fresh thyme leaves 
1 tsp rosemary 
1 Pinch Dried coriander 
1 spring onion, finely chopped 
salt and freshly ground black pepper 
125g plain flour 
1 free-range egg, beaten 
breadcrumbs 
vegetable oil, for deep frying
