Introduction: Scrumptious Banana Bread Waffles

About: Hey, have you ever heard of a giraffe who loves to build!?!?!

These banana bread waffles are unbelievable. Light, fluffy, and moist, these waffles make a superb breakfast, lunch, dinner, or snack ;) They are super easy to make and can be served with whipped cream, fresh fruit, and even fried chicken.

Supplies

  • 2 bananas
  • 1/4 cup melted butter
  • 1 1/4 tsp baking powder
  • Pinch of salt
  • 1/2 cup sugar
  • 2 eggs
  • 2 cups milk
  • 2 tbsp oil
  • 1/2 tsp vanilla extract
  • 1 1/2 cup all purpose flour
  • 1/2 cup corn starch

Step 1: Mash the Bananas

In a large mixing bowl, mash the bananas with a fork. Over-ripe bananas work well since they are mushier and will mix with the batter better, but feel free to use any bananas you have on hand. Microwave the butter and incorporate into the banana mixture.

Step 2: Making the Batter

Separate the eggs. Whisk the yolks into the mixing bowl and set the whites aside (we will need them later). Add the rest of the wet ingredients (milk, oil, and vanilla) then incorporate into the banana mixture. Then add the dry ingredients (baking powder, flour, corn starch, salt, and sugar). Whisk well, until the batter is consistent throughout.

Step 3: Whip the Egg Whites

Whip the egg whites until they form stiff peaks. You may want to use an electric beater for this step (unless you want the workout of course). When finished, you should be able to hold the bowl upside down without any egg falling out! Carefully fold the egg whites into the batter. Make sure you aren't too aggressive as this will deflate the egg whites, resulting in a less airy batter.

Step 4: Waffle Iron!

Pour the batter into the waffle iron and cook until just browned. The cook time will depend on your waffle iron (mine was set to medium and needed about 2 minute on each side).

Step 5: Bake Waffles (Optional)

After my waffles have been cooked in the iron, I put them in the oven at 250 degrees for 4-5 minutes. This lets excess steam escape from the waffle, making it a bit crispier and less soggy. If you like your waffles crispier on the outside and fluffy on the inside, I suggest doing this step.

Step 6: Plating and Extras!

There are countless ways to plate your waffles. Some of my favorite toppings are fresh fruit, agave (or maple syrup), fried chicken, whipped cream, powdered sugar, and even sour cream. TAKE YOUR PICK!

Waffle 1

Bananas, whipped cream, powdered sugar, and agave

Waffle 2

Sour cream, powdered sugar, and a pinch of cinnamon (sour cream actually goes surprisingly well with the banana bread flavor!)

Of course, these waffles are plenty sweet on their own and can be eaten plain as well!
