Introduction: Smoked Caramel Fudge Cookies

Chocolate Chip Cookies are a tasty classic, but what happens when you don't have any chocolate chips? This recipe does the trick, not to mention the added spunk of a smokey flavor from a pellet grill.

I typically do the majority of my Traeger smoking with meats for beef jerky, roasts, or pulled pork. However, there's a lot of opportunity for sweets in a pellet grill.

Ingredients

  • 3/4 c. unsalted butter softened
  • 3/4 c. brown sugar
  • 1/4 c. granulated sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 2 c. all-purpose flour
  • 2 tsp. cornstarch
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • Caramel sauce and fudge

Step 1: Prep and Bake

  1. Preheat Traeger to 350 degrees F.
  2. Mix together the brown sugar, sugar, and butter until light and fluffy. Add an egg and the vanilla, mix.
  3. Mix in cornstarch, baking soda, flour, and salt.
  4. Fold in gently the caramel and fudge. Be careful not to blend it in so that it stays with a marbled texture.
  5. Roll balls of dough and place them onto a baking sheet.
  6. Bake for 15-17 minutes, until barely golden brown around the edges.

Step 2: Conclusion

This recipe isn't necessarily the most straight forward. Typically when you make chocolate chip cookies they bake for about 8-10 minutes. When first making this recipe I had to let the cookies bake for longer and longer until they were the right consistency. I landed on about 15-17 minutes on the pellet grill.

As for wood, you can really use any kind you'd like, which is why I left it out of the instructions. I personally decided to use a blend of apple and maple.

The last note I would make is that you can absolutely use chocolate chips in this recipe. They will turn out a little sweeter than the original variation.
