Introduction: Soda Bread in a Dutch Oven

Step 1: Ingredients

225 g plain flour
225 g wholemeal flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
3 teaspoons baking powder
40 g butter
300 ml buttermilk (or half yogurt and half milk)
Some water

Step 2: Mixing the Dough

Empty the dry ingredients into a bowl (or whatever container you have available). Rub in the butter until no lumps remain. Mix in the buttermilk and a little water until you have a sticky dough (wetter than pastry) . Shape into a rough ball.

Step 3: Baking the Bread

Pre- heat the Dutch oven on the coals until good and hot. Grease the bottom with some cooking oil. Drop in the dough, cover with the lid, and heap coals on top. Cook for at least half an hour, maybe 45 minutes, until risen and firm to the touch. You just have to keep checking.

We were a bit short of coals so it didn't stay hot for long enough- but we added more fuel and persisted, and it came out all right in the end!

Step 4: Eating!

Allow to cool if you can wait, then slice and butter. Best fresh, but it also toasts or fries well next day.
