Introduction: Soft Pretzel Bites
In this instructable, I will show you how to make soft pretzel bites.
Step 1: Ingredients
For this recipe, you will need:
4 1/2 c all-purpose flour
1/2 c baking soda
6 tbsp unsalted butter, melted
1 tbsp vegetable oil
2 tbsp light brown sugar
1 pack of active dry yeast
coarse sea salt
2 1/2 tsp salt
1 1/2 c warm water + 1 tbsp water
1 egg
Step 2: Yeast Action
In a large bowl, combine 1 1/2 c warm water, brown sugar, yeast, butter and let set for five minutes.
Step 3: 5 Minutes Later.....
Now add in the salt and flour and mix in until your dough is formed.
Step 4: So Kneady
Remove the dough from the bowl and knead for a few minutes.
Step 5: Don't Miss a Spot.
Coat the sides of a large bowl with vegetable oil, then place the dough in the bowl, coating all sides of the dough with the oil and cover the bowl.
Step 6: Proof It!
Place in an oven that is not preheated, but does have the oven light turned on. Proof dough in oven for an hour.
Step 7: Rollin' & Cuttin'
Remove the dough from the oven and roll it out.
Cut the dough into bite-sized pieces.
Step 8: Be Careful!
Bring 3 qts of water to a boil, and slowly add the baking soda to the water (add too much at once, it will boil over).
Put a few of the pretzel bites in (about 10) boil for 30 seconds and remove the bites with a slotted spoon.
Place the bites (spaced apart, not touching) on a baking sheet covered with parchment paper and sprayed with non-stick cooking spray.
Step 9: In a Small Bowl
Mix the egg with 1 tbsp water.
Step 10: Get Out That Brush
Coat your bites with the egg wash. Top the bites with the coarse salt.
Step 11: Bake!
Place in an oven that's been preheated 425° for 10 minutes, or until golden.
Step 12: Enjoy!

I just put the dough in the oven to proof. But, according to your directions, I only used 1/2 C warm water. Needless to say, the dough is very dry and I'm sure I won't be able to use it ! You should definetly proof your ingredient list with your directions in the

I think the ingredients list is correct, as it say "1 1/2 C warm water + 1 tbsp water". My guess is you use only 1/2 C warm water to activate the yeast, then use the remainder when you add the salt and flour.

Now I see what the issue was!!! the 1 1/2 c water was mixed in on step two- typo before left off the 1 c!!! sorry, corrected!

I would love to try this BUT; How much yeast is one packet?
Where is the cheese?

Per the packet= 1 packet of yeast= approximately 2 1/4 teaspoons.
I bet these would be good with cheese sauce :).

My dough wasn't the stick to the sides of the bowl and you will need extra flour to knead either. About 1:05 in the video is what my dough looked like before step 4. at 1:35 it's what it looked like after proofing in the oven.

Yum! Nice quality step-by-step pictures. I also like the fact that these are completely from scratch :) I want to make these sometime. Good job!

Good idea. I haven't tried using an egg wash before baking. I will have to try this.
