Introduction: Spinach Artichoke Dip Deep Dish Pizza (Coconut Oil Substitute)

Just in time for the Superbowl, I have created a spinach artichoke dip deep dish pizza...
and since I recently started cooking with coconut oil, I decided to substitute all oil and grease with it.

Ingredients list -

PIZZA DOUGH
:
dry -
3 1/2 cups of unbleached all-purpose flour
1 pkg. active dry yeast, fast rising
3/4 tsp. salt
wet -
1 1/4 c. hot water (80-100F)
2 tsp. honey
1 tbsp. of coconut oil

For the Cooked spinach:
1 tsp of coconut oil
1 1/2 bags of fresh baby spinach
Make:
2 cups of cooked spinach

For the cooked artichokes:
1 can of artichokes
2 garlic (diced)
1 tsp of coconut oil
Make:
2 cups of cooked artichokes

SPINACH ARTICHOKE DIP:
3 tbs of coconut oil
3 tbs of flour
1 1/2 cups of milk
1 cup of uncompressed Parmesan cheese
1 cup of grated mozzarella cheese
1 block of cream cheese
2 cups of cooked spinach
2 cups of cooked artichokes

Step 1: Make the Dough...

For the dough:

Need:

DRY INGREDIENTS
3 1/2 cups of unbleached all-purpose flour
1 pkg. active dry yeast, fast rising
3/4 tsp. salt

WET INGREDIENTS
1 1/4 c. hot water (80-100F)
2 tsp. honey
1 tbsp. of coconut oil

FOR ROLLING:
You will need:
1/4 cup of cornmeal
1 tbs of ground coffee
Combine...and use for rolling.

Whisk dry ingredients together.   Mix wet ingredients together.  This will give the most even ingredient distribution to create a pizza dough with a perfect mixture.  Note that the coconut oil is solid at room temperature.  Since yeast will be used, I recommend the hot water remains below 100F.

Step 2: Making the Dough Ball

Mix the wet and dry ingredients together and with your hands knead until the mixture becomes uniform.  Sprinkle small amounts of flour in the large bowl while mixing.  Knead until the dough is no longer sticky and you can form a ball.

Set aside and let rise for 30 minutes.

During the down time, you will create the spinach artichoke dip.

Step 3: Spinach Artichoke Dip - Cooking Fresh Baby Spinach

Need:
1 tsp of coconut oil
1 1/2 bags of fresh baby spinach

Make:
2 cups of cooked spinach

In a pan, add some coconut oil, about a tsp. and the spinach leaves.  Saute until they shrink.  You will need at least two cups of cooked spinach, so you will probably need to repeat at least twice.  Set aside...

Step 4: Spinach Artichoke Dip - Cooking Canned Artichokes

Need
1 can of artichokes
2 garlic (diced)
1 tsp of coconut oil

Dump the can or artichokes into a large straining container.  Rinse the artichokes.  Although I didn't do this, it would be best to break the artichoke hearts apart at this stage in the process, otherwise you will have to do this while they are still hot.  In a pan add two diced garlics and coconut oil and simmer till the aroma fills the air.  Add the artichoke hearts.  Cook evenly.

Step 5: Spinach Artichoke Dip - Making the Dip

Need:
3 tbs of coconut oil
3 tbs of flour
1 1/2 cups of milk
1 cup of uncompressed Parmesan cheese
1 cup of grated mozzarella cheese
1 block of cream cheese

In a large sauce pan combine the oil and flour and heat until the mixture becomes pasty.  Add in the milk and heat evenly.  Add the block of cream cheese and break it down with your spoon so it combines with the mixture.  Add the remaining cheeses and mix.  

Step 6: Spinach Artichoke Dip - FINAL STEP

Mix in the spinach and artichokes you set aside.  And you are now done with the dip!

By this time your dough should have doubled in size.

Step 7: Rolling Out the Dough

Now that the dough ball has doubled in size it is time to roll it out.
Sprinkle your rolling surface with flour and once you have rolled it to a decent size, sprinkle the corn meal coffee mixture on the bottom side of the dough.  This will keep the dough from sticking and add some flavor.

Preheat the oven to 450F

You can make one large pizza, or two 12in cake size pizzas like I did.  

Roll out the dough, cut it and place it in a greased cake pan.  Stretch it to fit. 

Step 8: Baking the Pizza...

Place the dip into your dough and fold the the outer edges of the dough into the pan.  Pinch the edges against the pan.  Grease the crust.  Add diced tomatoes.  The oven should be preheated to 450F.  

Place the pizza in the oven and bake for 30-45 min.

Step 9: Eat and Enjoy!

Take the pizza out of the oven, transfer to cutting board as I prefer, and serve to your guests.
