Introduction: Super Easy No-Mixer Banana Cupcakes - Egg-less & Dairy-free

For something so easy, quick, and cheap to make, they are amazing!

Surprisingly these soft, moist, springy cupcakes contain no eggs or dairy, except in the white chocolate I used for the optional topping. Use vegan chocolate if you wish. I'm not a vegan myself, and I love eggs and dairy. But without the eggs, the banana flavor really comes out, not overpowering, just a lovely clean banana-y-ness. The texture is also different to a 'normal' cupcake. It is more like a cross between a muffin and a donut.

Even more quirky is that I make the batter in a bag! (Or you can use a bowl). No mixer or even a whisk is required. Very little washing to do afterward.

This is the perfect recipe for a lazy baker (like me)... If you like bananas, you must give this a try!

Quick ingredients lists: Bananas, sugar, salt, vegetable oil, water, self-raising flour. For the optional toppings: white chocolate & peanut butter, cinnamon & sugar.
