Introduction: Tacos From Scratch With Homemade Tortillas (gluten Free)

Oh how I love Mexican food, I might be biased because I'm Mexican and I've eaten this food all my life. But I'm not the only Mexican foodie, many people around the world love it.

And although Mexican food is way more varied than tacos, they are the most iconic Mexican food. So today I'm going to tell you all my secrets to make the perfect tacos from scratch, we'll be making tortillas!

You'll be surprised at how easy and delicious they are. The flavour is just amazing. Once you taste the homemade tortillas you'll never want to buy them again.

And did you know most Mexican food is gluten free? The problem with store-bought tortillas is that sometimes they add wheat flour even to the corn tortillas for softness. But the tortillas we are going to make only have corn flour which has no gluten at all. So if you are avoiding gluten but not avoiding delicious food, you'll love them.

Step 1: Gather Your Materials

For the tortillas we'll need:

  • Masa mix or instant corn masa flour (maseca is a popular brand)
  • Water
  • Salt
  • Baking soda

For the tacos:

  • Something to stuff them (shredded chicken or other meat, potatoes)
  • A little bit of oil

Step 2: Make the Dough

Depending on how many tortillas you want put the masa mix in a bowl. I make 10 tortillas with 1 1/2 cups of flour.
Now add 1/2 tsp of baking soda for each cup of flour. This is the secret to make them very soft.

Add the salt according to the instructions written in the package. Mix.

Add water according to the instructions. My masa mix needs the same amount of water than of flour. Mix the ingredients until you have a soft dough.

Step 3: Form the Tortillas (no Tortilla Press Needed)

Form a ball smaller than your palm..
Cut a plastic bag open, put the ball between a silicone mat and the plastic bag or is you don't have a silicone mat put the dough in between the bag. With the rolling pin make it flat. It should be 2-3 mm thick.

Step 4: Cook the Tortillas

Heat a pan in medium heat. Put the tortilla and wait 30-40 seconds. Flip it. It should be a different shade of yellow (darker). Wait another 30-40 secs.

The secret to make them stay warm without moisture is to keep them wrapped in a kitchen towel. Every time you finish one put it inside the towel.

Step 5: Make the Tacos

Now to make the tacos simply put the stuffing and roll the tortilla tightly.
Put them side by side to keep them rolled or you can use a tooth pick to keep the tacos closed.

Place them in a pan with a little bit of cooking oil. Once they get crunchy flip them.

You could deep fry the tacos too (If you're not too concerned about eating lots of oil) these are called "flautas" (flutes) and are made with bigger tortillas.

Step 6: Toppings

The authentic tacos have some toppings: lettuce, sour cream, salsa, queso panela (if you can't find it you can sub it with feta cheese)

Step 7: Enjoy!
