Introduction: Talapia Tomato Chutney W/ Wilted Greens for 2

This is a simple yet delicious recipe my wife and I whipped up, based on what we had in our kitchen.

Step 1: Ingredients and Cooking Utensils


Ingredients

2 frozen tilapia filets (in plastic)
1 small tomato
1/2 lbs baby spinach
2tsp olive oil
1tsp steak and meat seasoning (I prefer Chef Merito)
1/4tsp paprika
1/2tsp garlic salt
1/4tsp creole seasoning
coriander
black pepper
seasoning salt

measuring spoons
microwave oven

Step 2: Prepare the Tomato Chutney Mix

The first thing you need to do is put the two unopened tilapia filets in the microwave for two minutes, and put a splash of olive oil in a small frying pan over medium heat.  While the filets are prepping in the microwave and the oil is warming, dice a small tomato and mix it in with the steak and meat seasoning, garlic salt, paprika, creole seasoning and olive oil in the small plastic bowl.

Step 3: Combine Chutney W/ Tilapia


Remove the fish from the microwave. It should still be fairly cold.  Cut a small 1 too 1 1/2 inch slit in each bag.  Spoon even amounts of the tomato chutney mixture into each bag.  Return to the microwave for six additional minutes.

Step 4: Wilting the Greens

Toss the greens into the warm olive oil. Add coriander, black pepper, and seasoning salt to taste. Just about a dash of each, with a little more coriander. Toss around for three too four minutes, or until they are wilted down.

Step 5: Serve and Enjoy


Remove the tilapia from the microwave.  Cut one end of each bag completely off.  Slide the filets out onto a plate, serve up the greens and enjoy.
