Introduction: The PERFECT (in My Opinion) Crispy Quinoa Burger!

When we were younger, my mother assigned all seven of us kids specific jobs around the house. I, the middle child, was assigned to kitchen duty with my older brother. We worked together for many years, experimenting with different culinary creations and cooking for our large family of nine.

In our house we try to eat healthy. However, with such a large family we felt the need for something that we could freeze and easily reheat. Sure, there were plenty of veggie burgers that we could choose from the store, but these were all very pricey. So we decided to experiment on our own.

We started with a random recipe for quinoa burgers as a baseline, but there were issues with the consistency of the patties. They would not hold together. My brother and I tried adjusting the recipe and slowly we got closer and closer to what we wanted. Sadly, my brother moved away to college before we had found out the "golden ratio".

I come to you today to tell you that I have, indeed, found it. The most delicious, stable, and amazing quinoa burger you have ever had the pleasure to taste (at least in my opinion) is only a few steps away!

Here's how you make it:

Step 1: Gather Supplies

For this recipe you will *need

5 1/3 Cups Cooked Quinoa

6 large eggs (beaten)

1 teaspoon salt

1/2 teaspoon pepper

4 tablespoons parsley (chopped)

1 small onion (chopped)

2/3 cup grated parmesan

6 cloves minced garlic

1 1/2 cups breadcrumbs

1/2 cup grated carrot

1/2 cup grated zucchini

*The amounts you see me use may not match up to the amounts I am telling you to use. I am making five and a half time this much patties so that we can have plenty to freeze!

Step 2: Preheat the Oven

Preheat your oven to 400 degrees.

Sorry for such a bad picture, but our oven is pretty dirty... and I was in hurry!

Step 3: Combine First Round

Once the ingredients are gathered and prepped, the rest is pretty easy. For this step combine the quinoa, eggs, salt, and lemon pepper in a large bowl. I am making so much that I have to use our giant stockpot 😂

Step 4: Combine Second Round

Next, stir in the parsley, onion, cheese, carrot, zucchini, and garlic.

Step 5: Add in the Breadcrumbs!

Now simply add in the breadcrumbs (You may need to use your hands to get everything combined!)

Step 6: Spray Your Pan

Take a large baking sheet and spray it with nonstick cooking spray so that the patties won't stick.

Step 7: Form the Patties

To form the patties we used to use an actual burger mold. However, we find it easier just to make them by hand. Start by grabbing a bit of your patty mixture, then flatten it out onto the pan and shape it into a circle.

Step 8: Cook the Patties

Once your baking sheet is full it's time to bake. Bake the patties for 10 minutes, then flip them. Cook them for an additional 5 minutes once flipped or until golden brown.

Step 9: Cool and Enjoy!

Now all you need to is let your patties cool a little and then enjoy! Get your bread of choice (we like to eat them on flat rounds) and top as you would any other sandwich! I like to put mayonnaise and ketchup on mine.
