Introduction: Veg Tawa Dhamaka With Indian Bread!

This is my first instructable. It's about making an amazing Punjabi meal without meat. It is completely enjoyable from making as well as eating point of view. I hope you would get help from this instructable.

Supplies

For Veg Tawa Dhamaka :

1) Ketchup - 2 tbsp
2) Chilli powder - 4 tsp
3) Coriander cumin powder - 4 tsp
4) Turmeric powder - 1 tsp
5) Chaat Masala
6) Kitchen King powder - 4 tsp (Indian spice mix)
7) Oil
8) Cabbage (square shaped cut) - ½cup
9) Capsicum (square cut) - ½ cup
10) Par-boiled Cauliflower - ½ cup
11) Par-boiled French beans-½cup
12) Salt
13) Green chilli (2)
14) Cottage cheese (square cut) - 200 gm
15) Tomato puree-¾ cup
(*take 3 tomatoes and make 3 - 4 cuts on their surfaces and boil them for 5 minutes. After that peel the skin of tomatoes and make the puree)
16) Onion (square chopped) - ¼ cup
17) Tomato (deseeded square chopped) - (1)
18) Curd - 2 tbsp
19) Butter - 1 tbsp
20) Fresh cream - 1 tbsp
21) Ginger paste - 1 tsp
22) Dried Fenugreek leaves - 1 tsp
23) Coriander leaves (for garnishing)



For Indian bread (Kulcha) :

1) Refined wheat flour (round about 125 gm)
2) Sugar - ½ tsp
3) Baking powder - ½ tsp
4) Baking soda - ¼ tsp
5) Oil - 1 tbsp
6) Curd - 2 tbsp
7) Water (as per need)
8) Black sesame - 2 tsp
9) Salt
10) Coriander leaves



For Lassi :

1) Curd - 250 gm
2) Sugar - (as per need)
3) Strawberry syrup (for garnishing)


Prep time : 45-50 minutes
(*excluding the resting hours of dough)

Step 1: Ketchup Mix (for Sabji)

Take Ketchup in one cup.
Add Kitchen King powder, chilli powder, Cumin Coriander powder, Turmeric powder, Chaat Masala powder into it (measurements as per mentioned in supplies).
Mix it well and keep it aside.

Step 2: Sautéing Veggies

Take Tawa (pan) on a gas stove (medium flame), then take 2 tbsp oil.
Add square chopped onions and sauté them for a minute.
Add square chopped tomatoes and sauté them for a minute.
Add Capsicum and Cabbage and saute for a minute or so.
After that, add par boiled Cauliflower and par boiled French beans along green chillies (vertically cut).
Then add a pinch of salt over the veggies.
Sauté all the veggies on Tawa for minute or so and then add Cottage cheese and then again sauté them all for half a minute and turn off the gas stove flame.

Shift the sautéd veggies to another bowl.

Step 3: Preparation of Gravy

Take a pan and put on gas stove (medium flame)
Take about 2 tbsp of oil in a pan.
Add tomato puree to it and cook it for 2-3 minutes.
Add ginger paste.
Then add Ketchup mix we prepared earlier.
Add a pinch of salt.

Step 4: Assembling (for Sabji)

Add all the sautéed veggies to the gravy and also add some water to gravy.
Cook it well for 2-3 minutes.
Turn of the gas flame
Add curd and mix it well. Then add fresh cream for creaminess.
Add crushed dried Fenugreek leaves.

Now our Veg Tawa Dhamaka is ready.

Step 5: Making of Dough for Indian Bread (Kulcha)

Take some refined wheat flour in a bowl.
Add salt, sugar, baking powder, baking soda and mix well.
After that, add oil, curd and again mix well with hands.
Add water for binding and make a dough.
Note that our dough must be soft.
Knead the dough for minimum 10 minutes.
Brush the dough with oil and give it a rest of 2 hours.
After that, again knead the dough for 4-5 minutes.
Partition the dough into equal ball sized doughs.

Step 6: Making of Indian Bread (Kulcha)

Take the ball sized dough on a board and make it a bit flat with a rolling pin.
Now, sprinkle few black sesame seeds and finely chopped Coriander Leaves on it.
Then, flip it and again roll it with a rolling pin to make an oval shaped bread .
Now apply some water on the surface of bread not consisting sesame and corrainder.
Now it is ready for cooking!!
Now preheat a Tawa (pan) on gas stove with high flame for about 2-3 minutes.
Make a bit of splash of water on it.
Put the bread on the tawa(pan) in such a way that the surface of bread containing sesame seeds and corrainder remains upside.
You will find that the bread will start to perforate a bit. When this happens, turn the Tawa (pan) upside down and let the bread be cooked on the upper side also.
The bread will inflate a bit more.
Now take the pan off from the stove flame and now our Indian bread is ready.
Apply some butter on it.

Step 7: Lassi

Take one bowl and pour curd into it.
Add sugar.
Use blender to mix and dissolve the sugar perfectly into curd.
Pour this lassi in a glass.
Put some strawberry syrup on top of it for garnishing.

Step 8: Serving

Reheat the veg Tawa Dhamaka and serve it with kulcha and lassi.!!! :)
