Introduction: Vegan Double Chocolate Cookies

About: I love to cook, ride bike (and repair) and build whatever I can think of building; even if I'm not able to do it or I don't have the necessary equipment! :D

Today I want to share with you this easy and fast recipe that I tried.

These cookies are perfect for breakfast, as a snack and probably as a "no trouble recipe" whenever you invite your vegan friends!

Step 1: Ingredients

To make these cookies you need:

  • 150 g of whole wheat flour;
  • 40 g of cocoa powder;
  • 40 g of sunflower oil;
  • 60 g of cane sugar;
  • 30 g of coconut oil; *
  • 7 tbsp of soy milk;
  • 1 tsp of baking powder;
  • 100 g of chocolate chips;
  • vanilla extract (as needed);
  • a pinch of salt.

*if you don't have the coconut oil (or you don't want to buy a whole bottle like I did) replace it with the same amount of sunflower oil.

Step 2: Let's Start!

To begin we have to mix the liquid ingredients with sugar. Start mixing the oils using a whip, add the cane sugar and mix well. Finally add the soy milk and mix well again.

Step 3: Form the Dough

Once mixed, it's time to add the powders. Add the whole wheat flour, cocoa powder, a pinch of salt and the baking powder (better if sifted) to the mixture and mix well. The mixture tends to become more dense.

At this point add the chocolate chips too, I preferred to use pieces of chocolate to make my cookies even greedier. If needed, add a little of milk to help you mix everything. It will end up being dense but creamy.

Step 4: Shape the Cookies, Bake, Eat!!!

Time to bake!

Preheat the oven at 180°c (356°f).
To form the cookies, grab the mixture into balls using a spoon and put them well spaced on a parchment paper covered baking sheet. Bake the cookies for 15 minutes and, once cooked, the cookies will still be soft: they will harden as they cool down.
