Introduction: Vegan Sugar Cookies From Scratch

This scrumptious treat is the way to go when your looking for something that hits the sweet tooth ! These delicious little bundles of joy are so simple yet have a perfect blend of flavours that will keep you wanting more. These vegan cookies taste so much like traditional sugar cookies but even better :) Seriously, these are the cookies of my dreams, and I think you will LOVE them!

Supplies

Ingredients :

COOKIE

    2 cups + 1 tbsp all purpose unbleached flour

    1/2 tbsp baking powder

    1/2 tsp baking soda

    pinch salt

    1/2 cup room temperature coconut oil (semi-soft and scoopable)

    3/4 cup + 2 tbsp granulated sugar

    1/3 cup water/almond milk

    1/2 tsp pure vanilla extract

    ROYAL ICING( optional )

    2 cups powdered sugar

    3 tbsp soy milk (add more or less for your preferred consistency)

    Food colouring (optional ) to prefered colour.

    Step 1: Cookie Base

    In a medium to small sized bowl combine the flour, baking powder, baking soda, and salt. Set aside to use later.

    Step 2: Cookie Base

    In a large bowl, cream together the coconut oil and the sugar. Beat for 1-2 minutes until the mixture is nice,light and semi-fluffy. Add the water/almond milk and vanilla and beat until the mixture is well combined.

    Step 3: Cookie Base

    Gradually add the flour mixture ( in three parts ) to the creamed sugar mixture, beating until combine.

    Step 4: Chill

    Wrap the dough tightly in plastic wrap and freeze for about 30 minutes.

    Step 5: Defrost

    Before rolling, let the dough rest at room temperature for about 30 minutes

    Step 6: Rolling

    Preheat your oven to 325F. Roll the dough out. The dough should be about ¼” thick. Use cookie cutters to cut out the dough or roll, use a flat spatula to gently remove the excess dough. Keep re-rolling and cutting out the dough until it’s all used up. OR roll the cookie dough into 1 tbsp balls and flatten out slightly.

    Step 7: Shaping

    Transfer the cookies to a baking sheet lined with parchment paper to prevent sticking. Leave 1″ space between cookies.

    Step 8: Chill

    Pop the unbaked cookies into the freezer to chill for about 8 minutes before baking.

    Step 9: Baking

    Bake for 8-10 minutes, until the cookies are lightly golden around the edges and slightly firm in the center. Let them set on the baking sheet for a few minutes before transferring to a wire cooling rack.

    Step 10: Cool

    Make sure they are cooled completely before decorating. (Pop ’em in the freezer if you’re impatient.)

    Step 11: Royal Icing ( Optional )

    This is a simple step to decorate your cookies but they taste absolutely delicious on their own too !

    In a small bowl, beat together the powdered sugar and soy milk until smooth.

    Separate into bowls and add food colouring as desired.

    Quickly transfer icing into piping bags or seal in an airtight container or cover with a damp cloth to prevent the icing from drying out.

    Pipe away !
