Introduction: Breakfast Pockets

Amazingly delicious breakfast filled egg-roll wraps!

Update: I made these for my wife and I for breakfast this morning (she loved em!) but this time while i was filling the egg-roll wraps i also added a small dollop of jalapeño cream cheese, on top of the egg mixture, this was the perfect little piece to finish the puzzle, it was amazing!

Step 1: Gather Ingredients

Egg-roll wraps
Sausage/veggie sausage
Cheese (shredded)
Ricotta cheese
Optional: Hummus as a dip

Step 2: Pre-heat Oven 400*

Step 3: Cook the Eggs

Crack the eggs into a bowl, beat them, turn burner on, scrambled and cook the eggs then set aside

Step 4: Cook the Spinach

Melt butter in the pan, add spinach, cook then set aside

Step 5: Veggie Sausage

I like to use veggie sausage patties because they are healthier and in my opinion, taste better, anyways! microwave then shred the patties (i do it by hand)

Step 6: Bacon!

Microwave the bacon then set aside with all the other ingredients.

Step 7: Mix!

Place everything you have cooked into a mixing bowl, add cheese, and ricotta, then mix lightly

Step 8: Egg-roll Wrappers!

Layout egg-roll wraps, i used 3, place 3-4 spoonfuls of the mixture onto the wrap, fold then brush with oil.

Step 9: Cook!

Place all three pockets onto a baking pan sprayed with non-stick cooking spray, bake at 400 degrees for 12 minutes, take out and let cool for a minute or two

Step 10: Enjoy!

Plate and serve! I enjoyed them with a jalapeño hummus dip!

    You could easily make a bunch an freeze em! I do it with the breakfast burritos i make (see other instructable) and thank you for the kind words!

    Mouthwatering, beautiful. I want a stack of these in my fridge to pop one in the microwave to eat on the way to work everyday. So awesome.

    Lol i was wondering when someone was gonna catch that, 3 reasons i use "veggie products" 1. Taste great 2. Quick cooking time, i have a limited amount of time before work to eat, so grilling or frying or baking a normal hamburger/sausage, versus 2 minutes in the microwave and 3. Veggie burgers/sausage have way less fat, calories etc etc

    I have made this type of breakfast using flour tortillas, wrap tightly in plastic wrap and freeze. Then the night before, I take one out to thaw. In the morning, I microwave it and voila - breakfast.

    Yum - would not have thought to use egg roll wrappers - have always used tortillas.

    Yummy! A true stroke of genius.
    But, maybe substitute vegan bacon substitute for the bacon
    and tofu for the eggs.

    Appreciated :) i just tried it on a whim, the egg roll wrap gives it just the right amount of crunch

    I like this. I've done something similar with flour tortillas, but I'll have to try it with the egg roll wrappers. And my bacon will be as fake as my sausage. LOL
