Introduction: Chicken and Vegetable Spring Rolls

If so far your only experience with spring rolls is the tiny little things deep fried to with an inch of there life and heaped in with your Chinese takeaway then this is recipe is for you.

You can either choice to buy your own spring roll wrappers or make them. I would suggest that you probably buy them, they are not exactly difficult to make but they do tend to be very time consuming and quite tedious. 

You can put all most anything in spring rolls and try them out to see if they work. I started off with chicken and vegetables to keep it simple and see if this was something that could be done easily. Now that i feel that i can make then you will probably be seeing some more complex spring roll recipes coming from me. the spring rolls that we tend to be used to are poor substitutes to proper larger ones that can be easily made, it is amazing it what they can taste like when some effort has been put in and they're not tiny brown things containing 90% pastry and almost no filling. 

I would serve these with some chopped spring onions, soy sauce and sweet and sour dipping sauce.

Ingredients:

Spring Roll Wrappers:
1 cup flour
pinch salt
1 cup water

Spring roll Filling:
2 Chicken Breasts
Garlic
Mushrooms
Chopped Vegetables (i used a stir fry packet of mixed vegetables, but finely sliced carrots bean sprouts and spring onions will work just fine)
Lettuce
soy sauce
sesame seed oil (to fry mushrooms)
Ground nut oil (for deep frying)
