Introduction: Baked Potatoes

Potatoes!!!!! They are always neglected due to some or others reason like they are high in fats etc.etc.So here i am going to make a recipe which can be prepared anytime and is mouth-watering and excellent in taste quality.

Now the things about a twice backed potato is that is organic for a healthy diet for people looking for a better alternative.

It is a mixture of various flavors blended at your finger tips.

It is a great dish for the guest also.

So gather your tools,start the stove and let's get started.

Step 1: Ingredients

4 medium russet potatoes, washed well and dried

1 teaspoon olive oil

3 and 1/2 tablespoons salted butter, very soft

1/2 cup non-fat Greek yogurt

1/4 cup buttermilk

1/2 teaspoon salt

1/2 teaspoon pepper

3/4 teaspoon chives

3/4 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried onion flakes

1/2 teaspoon dried dill weed

1/2 teaspoon paprika

1 and 1/2 cups cooked broccoli, chopped, divided

2 cups cheddar cheese, shredded, divided

Step 2: Prepare

First make cut on the potatoes before baking so that they bake properly.

Place the potatoes in the dish for baking around 10-15 minutes in the oven at 400(F).

Once they are baked,leave them to cool for few minutes.

Step 3: Scoop

Now scoop inside the potatoes.

Leave about a quarter of an inch around.

I find that a serrated grapefruit spoon work really super duper for this so if you can use.

*****Keep the skin intact*****

Step 4:

After scooping apply olive oil around the edges and keep them aside.

Step 5: Mix

Now take all the mashed potatoes in the bowl and add butter and sour cream.

You can use low fat or fat free Greek yogurt if you prefer, and some salt and pepper.

And we will get this mashed up together until it's fairly smooth.

So I am going to add some Green onions for decorating.

This have just been sliced really really thin.

Other things that are really good to add are steamed broccoli florets a little bits of bacon bits. If you add stuff like that then this can really be one dish meal which is pretty cool.

Step 6:

And I am going to add some grated cheese

I am just going to add about half of this and then we will use the rest of it to put on top.

So want that mixed up you only we are just going to skip it back into our potato cells.

And you will Mound it up a little bit.We want to Sprinkle each of them with a little bit more cheese.

Step 7:

And at this point if you want to make this ahead of time and don't want to spend a lot of time you can wrap them in plastic or cover them with some kind of air-tight container and put them in a fridge until you're ready to cook them.

Then you just have to add on maybe an extra 10 or 15 minutes on the cook time to make sure that they are heated all the way through.

Step 8: Done.Dish Is Ready

So I am going to put this in a 400 degree oven for about 15-20 minutes until the cheese is melted and the potatoes are hot all the way through.

Take out and your potatoes are now ready to be served.

We have got some crispy brown tops the cheese is melted and they feel hot to the touch.

The inside is nice and fluffy and creamy and then the outer shell is crispy and it's pink to be great.
