Introduction: Lightly Salted Sardines

About: Hello, my name is Auroris. Every day we have the opportunity to learn new things, to rethink tired processes, and to improve the way we work.

If you like fish, you're one of the lucky ones.
Today I want to share with you how to make light-salted Sardines. This recipe is inspired from Russian cuisine but we will replace traditional herring with sardines. I prefer sardines for their intense taste and small size that make them better choice for holiday table

Step 1: Ingredients

  • 8 Sardines (aprox 500g)
  • 500ml Water
  • 60g Salt
  • 3 Bay leaves
  • 1 tbs Whole Pepper Mix
  • 1 tbs Whole Coriandre seeds
  • 5-6 Cloves

Step 2: Prep-phrase

First of all, boil water and add salt. Leave it out until it cools.

Now scale and clean the fresh sardines. Rinse well with cold water and you’re done!

Tip:Choose big fishes to make this process more easy and fast.

Step 3: Marinate the Fish

Take a food container with lid.

Add the fish, bay leaf, pepper mix, coriander and cloves. Optionally, you can add seasoning to the fish, but then you get a completely different taste. Fill with brine (water and salt) and place in the refrigerator for 48 hours.

Step 4: Serve

Cut off the head and divide the sardine in 2 fillets. Use the backbone to guide your knife. Serve them with a little chopped green onion or parsley, add a few drops of olive oli.
