Introduction: Mutton Pulao/Pilaf - One Pot Meal

Pulao or pilaf, as it is known in the South Asia, is another mixed rice dish popular in Indian cuisine. Pulao is a single-pot dish: meat and rice are simmered in a liquid until the liquid is absorbed. Mutton pulao is made with aromatic spices, rice and Mutton. The flavor of the pulao is rich and it tastes so great. It goes well with simple raita (yogurt salad) and boiled egg.

Cooking Time :1 hr to 1 hr 30 mins

Serves : 4 to 5

Step 1: Ingredients

For Mutton marination:

1 lb mutton/lamb, washed

2 tbsp thick curd

1 tbsp lemon/lime juice

2 tsp ginger garlic paste

1 tsp Kashmiri chilli powder

2 tsp Coriander powder

1/2 tsp turmeric powder

1 tsp Garam masala powder

1/2 cup coriander & mint leaves Salt as required

For Briyani:

2 cup Basmathi/long grain rice

Whole garam masala ( 2 cinnamon stick, 1 star anise, 2 big bay leaf, 4 cloves, 1 cardomon)

1 tbsp of ghee

1 cup onion, sliced

1 cup tomato,sliced

2 tsp ginger garlic paste

5 green chilli, slitted

1 tbsp garam masala

1 tbsb coriander powder

1 tsp red chilli powder

1/2 cup coriander & mint leaves

Salt as required

Step 2: Method

Wash the rice with fresh running tap water for trice and soak it with enough water for about 20 minutes.

Take all the ingredients in mixing bowl mentioned under marination, mix all well and marinade for 30 minutes.

After marination time, take mutton mixture in pressure cooker, add 1/2 cup water and close the cooker with its lid. Cook for 5 to 6 whistle and switch off the flame. Once the steam settles down completely, open the lid carefully. Transfer the cooked meat to another vessel.

Add ghee in same pressure cooker, add in whole garam masala. Add ginger garlic paste and saute for a minute.

Add onions, chilli and saute until it turn to translucent. Add in tomatoes, saute until soft. Now add all spice powders and salt, mix all well.

Add the cooked meat into cooker, and cook for 5 minutes. Drain the water from soaked rice. Add rice into the cooker and mix well without breaking it.

Add 4 cup of water in it, check salt taste once you added water. ( add some cilantro leaves (its optional)) Close the cooker with its lid and Cook for 2 whistle. Remove from the flame. Once the steam settles down completely, open the lid carefully.

Garnish with cilantro and mint, serve hot with boiled egg and your favorite choice of Raita.
