Introduction: Quick Spinach Lasagna Microwave

This is my entry in the Dorm food contest, because it is very fast and requires no special equipments and yet healthy, tasty and filling.

Though I am no longer a student or living in a dorm use this recipe quite often since it is quick no doubt and absolutely no compensation on taste.

A perfect meal when I am too tired or running out of time to cook.

Step 1: Ingredients:

you will need a microwave proof dish and a microwave( yes you could make it in an oven too but will take much longer than 20 minutes.

Pasta: Lasagna sheets or any other flat noodles.

1 can tomato salsa

spinach fresh leaves(around 2cups)-I use the spinach from salad packs

soft cream cheese- I use ricotta but philadelphia would work as well.

grated cheese of your choice( cheddar, mozzarella, parmesan)

Optional spices- nutmeg powder, herbs like thyme/ basil, pepper,

salt to taste

1-2Tbs milk

Step 2: Process

wash and dry the spinach leaves.

stir the soft cheese with 2Tbs milk -season with your choice of spices and salt.

Start arranging in layers.

First spread a layer of tomato salsa

Cover this with a layer of pasta sheets/noodles

then a thick layer of spinach leaves, followed by cheese sauce.

Repeat these layers in the same order till your dish fills up to the brim.-the last layer should be that of the cheese sauce. Sprinkle a thick cheese layer as a final step.

Step 3: Microwaving

Place the dish in the microwave and set the heat on a medium for 20 min. In my case it is 650W.

Let it cook for 20 minute.

After 2o minutes get the dish with a cloth or cooking gloves and let it cool a bit.

Be careful while handling the dish- it is very hot and steam from it can cause burns.

The Lasagna is ready...absolutely amazing- no compensation in taste or in texture!
