I accidentally made this recipe a few years ago by mistake. I had some sliced bacon in a bag with brown sugar and put it in the fridge. I forgot about it for a day and realized that the bacon had liquefied the brown sugar. I put it in the oven for about 2 hours on low heat and when I pulled it out i realized the brown sugar had caramelized and I had bacon candy. I have since refined this recipe to be able to produce the same results in just a few hours.
Step 1: What You Will Need
For the candied bacon you will need the following:
Dark drown sugar
Crushed red pepper
First lay the bacon out flat on a nonstick mat. I use a Silpat mat I got a Bed Bath and Beyond a few years ago. You will also need a baking sheet with a bit of a lip to it so the bacon grease does not spill out.
Step 2: Preparing the Bacon
After the bacon is laying flat on the mat push it close together so there are very little open spots between the bacon.
Coat the bacon in a layer of dark brown sugar, just enough to cover it.
Then lightly sprinkle on the cayenne pepper over the brown sugar coating, how much you use is up to you.
Finally sprinkle on the red pepper flakes, again the quantity is up to you.
Now you will want he bacon to sit for about 30 minutes before it goes into the oven.
Preheat the oven to 215ºF and bake for about 1 1/2 to 2 hours or until the brown sugar is mostly melted and the bacon is starting to crinkle.
After it is cooked let if cool for about 15 minutes then peel it off the the silpat in strips and lay on a plate to let it cool.
Step 3: Enjoy
This bacon has a kind of deep lasting sweet heat to it. You will not feel the spice Immediately due to the brown sugar but after you have eaten it you will feel a slight heat in the back of your throat. I absolutely love this bacon recipe and make it a few times a year.
