Vacuum or siphon coffee makers produce a clean, crisp cup of coffee. They operate on the basis that temperature and pressure are directly related. As temperature increases in a sealed chamber, pressure rises and forces water through the tube to where the coffee grounds are. Once the sealed chamber cools, pressure decreases creating a vacuum and sucking the coffee through a filter back to the initial chamber.
