Kayak length depends on what you wan to do with it. Longer kayaks are faster, track better, and store more stuff, good for oceans and open water. Shorter kayaks are more maneuverable and easier to transport. Usually only take my kayak out a couple times a year to a nearby lake or down a fairly easy river.For making it shorter, I left a 4' section in the middle where I sit alone then reduced the front and rear sections by 2 inches. It seemed to work, but you'd have to model it on a computer to be more exact.

I recommend building a scaled down cardboard version first to better understand the geometry of it all, then move on to the plywood. Best of Luck!!

Yes, I recommend drawing a straight horizontal line on a piece of paper. The horizontal line would be 0, then place dots above the line. Perhaps use centimeters or 1/8 inch instead of a full inch. So if the first number is 4.5 place a dot 4.5 centimeters above the horizontal line.
