Definitely! Besides using allergy-friendly chocolate, I've added xylitol to unsweetened chocolate with great results!
The cream cheese makes the truffles very creamy and rich; they're incredibly smooth and the little bit of added salt in the cream cheese has never been a problem. I've also been known to sprinkle a bit of salt on the truffles while they're still wet, getting that dark chocolate- sea salt combo so many people love!
