Introduction: Vegetarian Pizza From Flour to Oven..!!

Now Commercially Pizza doughs contain “enriched flour”or “bread flour” some malt syrup instead of regular old plain sugar , vital wheat gluten to enhance the level of gluten and a lot of other stuff like dough conditioners. But a normal home cook mostly cannot find all this stuff so how can you make a good pizza dough at home??? So this recipe very use full as not everybody can get their hands on all the commercial but everybody can do is use a good technique.. and here's my husband's favourite pizzaaaa..and yes its made from scratch!!!

Step 1: Getting Started..!

INGREDIENTS for PIZZA DOUGH:

2 Cups / 300 gms All Purpose Flour

1/4 Cup + 1/2 Cup / 165 gms Warm Water

4 tsp / 12 gms Milk Powder

7 gms/ 1.5 tsp Instant Yeast

4 tsp Honey

3 Tbsp Olive Oil

1 tsp Salt

Step 2: Preparing Dough..

1. take all purpose flour and mix in 1/2 cup luke warm water to it and keep it aside to rest for 15 minutes.

2. take 1/4 cup luke warm water and mix in 4 tsp honey and 7 gms yeast, mix and rest it for 15 minutes to bloom.

3. add in yeast water to the flour, add also salt, milk powder and olive oil to it.

4. mix and knead it well with the help of electric dough mixer (15-17 mins) or stand mixer(13-15 mins)

5. smoothen out the top of dough with oiled hands and make a large ball. keep it covered in greased bowl to ferment for 1.5 hrs, till it doubles up in size.

Step 3: Processing Dough..

6. Punch and cut the dough in 2 equal portions, make smooth balls, cover and again rest for half an hour.

Step 4: Preparing Topping..

any veggies of your choice could be used, i used here- diced tomato, onion, green capsicum, jalapenos, sliced olives, corn kernels

I have added a twist by marinating these topping veggies in a mix of olive oil, garlic, oregano, black pepper, salt. mix well keep aside and use at the time of serving, taste and flavour enhances.

Step 5: Pizza Sauce Recipe

Since, processed foods are not at all healthy for any of us so we have started cutting out the large majority of processed foods from our family’s diet, so i prepared a yummy pizza sauce that can go basically with any kind of pizza/pasta and pizza tastes same as that served in restaurants. It involves some effort and time but believe me, after using this sauce, you gonna feel its worth doing.

So here goes the ingredient list,

olive oil- 1.5 tbsp

onion- 1, finely chopped

garlic paste- 1/2 tsp

green chilly or jalapeno- according to how much heat you can handle, I used 1

capsicum-1/2, finely chopped

tomatoes- 4, medium sized, finely chopped

oregano- 1/2 tsp

black pepper pwd-1/4 tsp

salt- 3/4 to 1 tsp

tomato ketchup- 2tbsp

red chilli sauce and vinegar 1 tsp each

sugar- 1/2 tsp (optional)

to a pan, add olive oil, after that add onion, garlic paste and green chilly.. after onions sweat a bit, add capsicum, saute for 1 minute, add tomatoes, oregano, black pepper, salt. cook covered for 10-15 minutes, remove the lid, mix well and finally add tomato ketchup, red chilli sauce, vinegar and sugar.

Step 6: Final Preparation of Pizza..!

Finally, dust some cornmeal and roll the dough with hands, try not to roll out the dough, you hand stretch it - rolling kills the air bubbles... spread pizza sauce, then mozarella cheese and lots of veggies of your choice.

Bake in a pre-heated microwave oven at 250 deg centigrade and enjoy the super- delicious treat with any beverage of your choice!
