Introduction: Blueberry and Cream Cheese Pie

My name is Matthew and this is Marilyn, and it is our 3rd date! Coincidentally, we both enjoy making pie on π day. She loves blueberry pie and I love cheesecake so we combined our favorites to create an amazing no-bake pie! I hope you enjoy our first Instructable together!

Supplies

Ingredients


Crust

  • 2 cups Graham Cracker
  • 1 Stick Unsalted Butter 

Cream Cheese Topping

  • 16 oz of Cream Cheese
  • 8 oz Heavy Cream (or Whipped Topping if you don't want to make your own)
  • 4 tbsp Lemon Juice
  • 1 tsp Lemon Zest
  • 1 tsp Salt
  • 1 cup Confectioner's Sugar
  • 1 pouch Blueberry Sugar
  • 1 cup Blueberries

Blueberry Filling

  • 3 cups of Blueberries
  • 1/3 cup Granulated Sugar
  • 2 tbsp Brown sugar
  • 2 tbsp Cornstarch
  • 3 tbsp Water
  • 2 teaspoon Lemon Zest

Step 1: Graham Cracker Crust

  1. Crush Graham Crackers enough to make 2 cups. The best way to do this is to put them into a plastic bag and use a rolling pin.
  2. Melt 1 Stick Unsalted Butter.
  3. Combine Butter and Graham Crackers.
  4. Evenly spread mixture to conform to pie tin and set aside.

Step 2: Cream Cheese Topping

  1. Whip Cream Cheese until fluffy. This is easily done when it is at room temperature, so take it out of the refrigerator if you have not already done so!
  2. Add 1 tsp Lemon Zest, 1 cup Confectioner's, 4 tbsp Lemon Juice, and 1 tsp Salt to cream cheese mixture and combine thoroughly.
  3. In a separate bowl whip 8 oz Heavy Cream. Combine into cream cheese mixture and set aside. (or add store bought whipped topping).

Step 3: Blueberry Filling

  1. In a small bowl mix 2 tbsp Cornstarch and 3 tbsp water and set aside.
  2. In a medium pot combine 3 cups Bluberries, 2 tsp Lemon Zest 1/3 cup Granulated Sugar, and 2 tbsp Brown Sugar over low heat.
  3. As mixture heats up continue to stir and crush blueberries.
  4. Once juice coats the bottom of the pot add in cornstarch mixture.
  5. Continue to stir and crush blueberries until you achieve a gooey blueberry filling consistency.
  6. Remove from heat and set aside to cool at room temperature. The blueberry filling will become more viscous as it cools.


Step 4: Combining Crust and Filling

  1. Once Blueberry Filling has cooled to room temperature, spoon into Graham Cracker crust and spread evenly.
  2. Add Cream Cheese Filling on top of Blueberry Filling and spread evenly.
  3. Enlist your beautiful date to add your π symbol free hand or with stencil using your Blueberry Sugar.
  4. Line pie perimeter with remaining 1 cup Blueberries.
  5. Place pie in refrigerator for 3 hours to consolidate.


Step 5: Finished!
