Introduction: Chicken and Ham Pie

This is a simple and easy pie..not from the usual apple pie...which I'm sure is a favorite with everyone :-D
This is more in the line of savory...and takes the place of a nutritious and delicious meal. The decorating itself will want the kids to dig in ....even though adults will want to savor the beauty of it ;-)

Step 1: Ingredients

Ingredients

Pie Dough

8 oz flour
4 oz butter ( you could also substitute 3 oz butter and 1 oz vegetable fat )
1 tsp salt
1 tsp sugar
1/2 cup ice cold water


Filling

1 tbsp olive oil.
1 leeks trimmed and sliced
6 oz bacon/ turkey bacon/ or any other meat you like cut into small dices
8 oz cooked boneless chicken meat .
2 avocados , peeled , pitted and chopped
1 tbsp lemon juice
salt and freshly ground black pepper
2 large eggs beaten
150 ml /1/4 pint natural yogurt
4 tbs chicken stock

Step 2: Pie Dough

pulse diced cold butter/ fat with the flour and salt mixture...don't over do it...just enough till it's like crumbly.. now add the ice cold water and bring it all together till it forms a soft ball. Flatten in to a disk cover with cling wrap and place in the fridge to chill for 30 minutes. Now go do your filling till it chills :-)

Step 3: Filling

Heat oil in a frying pan...fry the leeks and bacon for  a few minues till it softens but not colored. Add the cooked and  chopped  chicken. Toss in the avocado with lemon juice...add this to the pot mixture...season to taste.
Take off fire
In another bowl mix 1 egg , the yogurt and the chicken stock...mix it well and keep aside...now go visit your dough.

Step 4: Fill It Up!

Take your dough off the refrigerator and roll it out thin...lift it off and place in greased tin. take a scissor and  trim a bit off the edge.
flatten it at the bottom of the pan...prick with a fork so it will cook well.
Place your index finger and pinch with your other fingers as picture and form the edge.
Check picture out. Now add your filling and pour in the yogurt mixture.

Step 5: Decorating

Any pie would look great once you decorate it....and also it's fun to do :-)
As in picture...keep you index finger and press on either side with your fingers and make your edge.
Then roll out your dough and cut strips...gently lift strips and place the edge in the center of the pie...twist gently and go in a spiral till you cover the top.
Use decorating punchers and punch out the flowers...place a smaller flower on the larger flower...but before you do that...paint it with food coloring if you like...it makes it all that more colorful and then kids can't wait to try it out.
Place you flowers according to how you like and punch out butterflies too...in various sizes..
btw...I got these punchers off ebay for a very reasonable rate!
Decorate your pie and admire your art :-)
Now bake it on high for 10 minutes and then lower the temperature till the filling gets cooked.

Step 6: Enjoy

Once pie is baked and cooled...
slowly remove it off the tray...I simply held the top with my hand and slowly overturned it and then quickly placed it on a plate.
Dig in and try it out! it's tasty :-D
