Creamy Garlic Dressing

While at a Greek restaurant in CT, I frequently had their House Salad with homemade Creamy Garlic Dressing, when I ordered their Fish & Chip dinner... then one day, I finally asked the owner for the recipe, and he gladly shared it with me.
INGREDIENTS:
1 cup sour cream
1 cup mayonnaise
4-6 garlic cloves, (or more or less to taste)
1 shallots
1/4 teaspoon cider vinegar
2 tablespoons sugar, (or more or less to taste)
1/8 teaspoon sweet paprika
½ teaspoons coarsely grinded pepper
½ teaspoon sea salt
Chives (optional)
INSTRUCTIONS:
Combine all ingredients together in food processor and process till smooth. The dressing's flavor improves with age -- don't use it for at least 3 days. Yield: 2-2/3 cups.
Note: The creamy garlic dressing keeps for a month refrigerated, but I doubt it’ll last that long!

Copied this and plan to try it but was wondering if white pepper would be a better choice all the flavor and no black flakes to catch the eye? White Balsamic vinegar
versus cider vinegar.? Anyway this will be a worthy try. Thanks for sharing.
