Introduction: Cucumber Onion Salad

About: Jack-of-all trades, master of some. I would probably be much more modest if it wasn't for these delusions of granduer that I suffer from.

Here is a Recipe. Simple to make. Delicious to eat. Goes great at a picnic or a sit down meal.

Step 1: Ingredients

Salad:

3 Large Cucumbers (or 4 medium cucumbers)

2 Large Sweet Onions ( Vidalia, Walla Walla, or Texas spring sweet)

Dressing:

1 cup Mayonnaise (240 ml for our metric brethren)

1/4 cup Sugar (60ml)

1/4 cup Apple Cider Vinegar (60 ml)

My family really likes this salad so I make a large batch when I make it. A batch half this size is good for an individual or small family.

Since most measuring cup sets don't have a 1/8 cup measuring cup .. 1/8 cup = 2 Tablespoons or 30 ml

Step 2: Tools

Mandolin Slicer - If you don't have a mandolin slicer I highly recommend getting one. They make it a breeze to uniformly slice foods. The one I have does thick and thin slices as well as large and small dicing (dicing blade not shown in the picture).

Mixing Bowl

Rubber Spatula - not necessary, but it makes it easy to get the Mayo in and out of the measuring cup as well as getting all the dressing out of the mixing bowl and into the salad.

Step 3: So Much Slicing

Peel the cucumbers and skin the onions.

Here is where the mandolin slicer really shines. I like the onions and cucumbers sliced nice and thin for this salad. Using the thin slice setting on the mandolin slicer makes each slice about 2mm thick.

Step 4: Dressing

Combine the mayo, sugar, and vinegar in a mixing bowl and blend until creamy smooth.

Pour the dressing over the salad and mix it in.

Don't worry that there doesn't seem to be enough dressing right now. As the salad marinades in the fridge overnight the liquids from the onions and cucumbers will mix with the dressing.

Step 5: The Hard Part

Now here is the hardest part of the whole recipe. Covering the bowl and leaving it in the fridge overnight to marinade together, instead of sitting down and eating it right away.

This is just the basic recipe. Feel free to to add any other flavor enhancers you want to the salad. Some popular choices include:

Garlic

A sprinkle of dill (Be careful not to add too much or it will overwhelm the flavor of the salad)

Replacing the sweet onion with a red onion for an extra pop of color and a slightly different taste.
