Introduction: Frozen Lemon Yogurt

Frozen Lemon Yogurt is a tangy, low fat refreshing summer treat. It’s easy to make and will get you raves when you share it with friends. But don’t invite too many friends or you won’t get any!

Supplies

Ingredients and supplies
1 quart lowfat plain yogurt

1 to 2 lemons

Sugar

Yellow food coloring

Ice cream freezer (your refrigerator freezer will do if you don’t have an ice cream freezer)

Fine grater

Citrus juicer or a bowl and a small juice glass

Large mixing bowl

Stirring spoon

Rubber scraper

Measuring cups

Step 1: Gather the Ingredients

1 quart lowfat plain yogurt

One, maybe 2, large lemons

1 2/3 cup sugar

Yellow food coloring

Step 2: Prepare Lemon

With a fine grater, grate the peel off one lemon. Measure 1 Tablespoon lemon peel.

Cut lemon in half. With a citrus juicer, juice lemon or lemons to get 1/3 cup lemon juice.

Step 3: Mix Together Ingredients

In a large bowl, mix together 1 quart of yogurt, 1 Tablespoon lemon peel, 1/3 c. lemon juice, 1 2/3 c. sugar and 4 drops yellow food coloring.

Step 4: Now Freeze the Lemon Yogurt

Pour yogurt mixture into your ice cream freezer container and freeze it according to your freezer’s directions. In a pinch you can put your bowl of yogurt mixture in the freezer and stir it every 10-15 minutes until it’s frozen.

Step 5: Now for the Taste Test. YUM!

We like Lemon Frozen Yogurt right from the freezer while it’s still soft. You can also put it in a container and freeze it until you’re ready to eat it.

This is really yummy on a raspberry dessert.

However you eat it, you’ll be ready to make another batch in the not too distant future.

The recipe makes about 5 cups.
