Introduction: Gluten Free - French Crepe Rolled With Jam
I decided to do this recipe because the 2nd February is time for a french tradition: the "Chandeleur". This tradition is about crepe. To respect it, you need to flip the crepes in the air with the right hand while you are holding a coin in the left hand, in order to have prosperity throughout the year.
However, if you don't believe it, just try to flip the crepes in the air, it's fun !
Ingredients:
- 3.5 oz of cornstarch (100g)
- 5.5 oz of milk (150g)
- 2 eggs
- 1 oz sugar (30g)
- 0.5 oz of melted butter (15g)
- homemade jam (if you have some, you can also get one you like)
- extra 0.5 oz butter for your crepe pan (15g)
Step 1: Prepare the Dough
Put the cornstarch, the sugar, the milk in a bowl and mix it.
Add the eggs, the milk and the melted better. Mix it with a cooking whisk.
Pay attention to the bottom, you need to mix all the cornstarch. Mix it until there is no more lumps.
Then peel and slide a apple, you have to do very thin piece of the apple (like on the picture, this give an extra flavour when you eat it, and it is absolutely so good !
Step 2: Materials
By now, you will need your crepe pan, a ladle and a thin spatula.
Step 3: Prepare Your Crepe Pan
Put your extra butter on you crepe pan, and try to put it everywhere.
Step 4: Cook
Cook all the crepe you can do. Try to make them thin, it will be easier after.
You can try the first one. I always say it's the one of the chef (just a way to eat one ^^)
Don't forget to flip the crepes in the air with the right hand while you hold a coin in your left hand.
Step 5: Slide and Choose the Jam You Will Use
Slide a crepe to make a rectangle (here you can also eat what you have cut, you will see, your crepe will be delicious).
Then choose the jam you will use. I will use a blackcurrant-raspberries jam which I have made last summer. And put some !
Step 6: Roll Your Crepe
Just roll it, now you can also think how you gonna present it.
Slide it into little pieces.
Step 7: Bon Appétit !
You succeed !
It's time to taste now !

Does the apple go in the batter before cooking or in with the filling after cooking?

Hey, I choose to put them before cooking to add some melting flavor when you will eat the crepes.
However, you can also put them after cooking to add some crispy flavor.

This sounds really good! I've been craving making crepes too :) What did you end up using the apple for?

Thanks a lot! I use the apple to add some flavours when you will eat the crepe. This give you different feelings when you will try it.
