Mint Chocolate Cake is the PERFECT combo of indulgent chocolate and mint frosting, made with cocoa powder, hot coffee, and mint buttercream, ready in under 60 minutes! This is perfect for any occasion; from birthdays to St Patrick’s day!

Supplies

For the cake:
2 cups sugar
1 3/4 cups flour
1 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
1 tablespoon vanilla extract
1 cup hot coffee you can substitute boiling water

For the frosting:
6 cups powdered sugar
2/3 cup unsalted butter softened
1 teaspoon mint extract
4-6 drops green food coloring
1/4 cup milk

Step 1:

Preheat the oven to 350 degrees. Get parchment paper and spray oil and put to two 9” pans

Step 2:

In a stand mixer on low speed mix together the sugar, flour, cocoa powder, baking powder, baking soda and salt

Step 3:

In a small bowl whisk together the eggs, milk, oil and vanilla then add it to the stand mixer on low then medium speed until just combined and finally add in the water carefully and stir it in by hand until just combined (do not turn on the mixer, it may splash on you).

Step 4:

Pour half of the batter into each of the pans and bake for 30-35 minutes

Step 5:

When the cakes are out and on the cooling rack, make the frosting.To your stand mixer add the powdered sugar, butter and mint extract on medium speed until light and fluffy then add in the milk 1 tablespoon at a time until the frosting can be spread easily with a spatula. ( it should not be lumpy like in the photo)
