Introduction: Hungarian Cherry Walnut Tea Bread

This dark cherry and walnut tea bread is more like a cake, just like most banana breads are :)

Step 1: Ingredients and Method

80 g butter

180 g icing sugar

2 eggs, separated

2 dl milk

1 pouch vanilla sugar, like from Dr. Oetker

200 g flour

1 pouch baking powder, like from Dr. Oetker

20 g icing sugar

50 g walnut, chopped

dark cherries as much as you like, pitted, halved/chopped

Preheat oven to 350 F

Grease and flour a loaf pan, sprinkle with walnut, set aside

Mix flour with baking powder, set aside

Bring milk to lukewarm and stir in vanilla sugar, set aside

Beat butter, icing sugar and yolks until smooth, followed with adding the milk mixture, beat to combine

Beat egg whites until stiff, with icing sugar a little at a time

Fold in egg white into batter, stir to combine then add in flour mixture a little at a time

Add in halved cherries, fold then pour into prepare loaf

Bake for 25 minutes or until knife inserted comes out clean

Cool on rack before slicing

Can be serve as is or sprinkle with additional icing sugar. Enjoy :)
