Introduction: PERFECT CREPES
This is a easy and fast recipe for homemade crepes that will turn out always perfect!

Step 1: WHAT YOU NEED
INGREDIENTS:
-3 eggs;
-200 ml milk (7 ounces);
-100 g of flour (3.5 ounces);
-a pinch of salt.
TOOLS:
-a large pan.
Step 2: THE EGGS
Place the 3 eggs in a bowl and break them with a fork until well mixed.
Do not beat them!
Step 3: THE FLOUR
Add the flour SLOWLY, not like in the photo :) , and a pinch of salt, and mix until super smooth.
Step 4: THE MILK
Add the milk SLOWLY, not like in the photo :) , and mix until well blended.
Mix slowly, try not to make any foam.
Step 5: THE PAN
Use a nice pan, that won't stick the food.
If your pan it is not too nice, just put a thin layer of butter or oil.
Place it on the fire and heat it up really well. From time to time drop a small tear of crepes batter, if it cook fast and won't stick it is ready, if it turn brown immediately, it is too hot.
Step 6: POUR THE BATTER
Pur a scoop of batter, and turn the pan to make it fill all up really well, forming a thin crepe.
After the first crepe you will know if you have to put a bigger or smaller scoop, or if it was just fine.
NOTE: if you only make few crepes you can fill them up at this step, than roll them in the pan, and they are ready!
Step 7: WHEN TO TURN
You will notice after just a moment that the side of the crepe will come off the edges of the pan.
That's when you have to turn it.
Step 8: TURN
Turn it and cook it on this side for just few seconds.
Step 9: DONE
You are done.
Now you can fill them up with cheese, and cover them with parmesan and stick them back in the owen for few minutes or just fill them up with jam, fruit, chocolate, cover them in whipped cream, etc etc…!

I am not sure if it is 2 eggs or 3 because in the picture there are 2 and it says 3

You forgot one thing. patiente. batter will be better the day after as the flour takes times to really absorb the liquid. If in a hurry then use warm milk.

I like butter in the pan. There is nothing that doesn't get better with a little butter. I like cottage cheese inside and sour cream on top for a main dish; and sliced fresh strawberries inside with whipped cream on top for dessert. Strawberries fresh from the garden! Yum! Thanks for the recipe.

Looks great, I'm gonna try these. Just one thing, I dont think you're supposed to use olive oil for high temp cooking, it burns easily. Maybe canola or similar would work better?

I heard many different things about which is the best oil to use…But I think olive oil is one of the best, also canola and grapeseed oil are, but in Italy we don't have much of it...
Anyways I don't usually use anything at all, I prefer, and my pan work really well and don't stick.
