Introduction: Petit Fours: Australian Candy - Coconut Ice
I called these as Australian candies because I have known them since I was a child as Australian delicacy. Many would say they are British candies, and that makes sense as well, as you know, Australians were originally from Britain :) But to be fair, other countries seem to have similar candies too with different names obviously!
Step 1: Ingredients
1 can, 300 ml, sweetened condensed milk
200 g sweetened desiccated coconut
200 g unsweetened desiccated coconut
4-5 c icing sugar (mixture should not be too sticky)
food coloring of your choice
NOTE: if you like them to be super sweet, use 400 g sweetened coconut. If not too sweet, use all 400 g unsweetened. Or you can do as I do here, half sweet half not. These candies are MEGA sweet, so most of the time I use all 400 g unsweetened :)
Step 2: Method
Mix all ingredients in a bowl until combined well
Divide into 6 equal portions
Color 2 portions with red food coloring, 2 portions with green food coloring and leave the other 2 portions plain white
Roll each portion and press it to a mold
Stack each portion alternating one to another and each time, press them firmly
Chill in the fridge for 4 H or overnight
Step 3: Enjoy~
Once chilled, take out candy from fridge and slice.
That is all :)
Note: you can place them in mini cupcake liner and serve them as petit fours for party
