In the winter, when you're in the mood for a s'more but don't want to go out in the snow to roast it, what you could do is make a s'more cookie!

Supplies

Servings: 4 dozen
Total Time: 40 Minutes

Ingredients:

  • 3 cups all-purpose flour, spooned into measuring cup and leveled-off with back edge of knife
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 oz (1/4 cup) cream cheese
  • 1 and 1/4 cup sugar, plus 1/2 cup more for rolling cookies
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 large egg
  • chocolate chips
  • Larmarshmallows
  • crushed graham cracker

Step 1: Crushing Your Crackers

With a cup, crush your Graham crackers in a sealed Ziploc bag. Next, take a small cup and begin crushing your graham crackers until they are in small pieces. Set this aside for step #11.

Step 2: Preparing Your Baking Sheets

First, set your racks in the middle of your oven and preheat to 375 °F. Line your baking sheets with parchment paper.

Step 3: Stirring Your Dry Ingredients

In a medium bowl, thoroughly stir together the flour, baking powder, baking soda and salt.

Step 4: Whipping Your Butter, Cream Cheese, and Sugar

With an electric mixer, whip the butter, cream cheese and sugar until light and fluffy.

Step 5: Adding Your Extract

Beat in the vanilla and almond extracts.

Step 6: Beating Your Egg

Next, scrape down the sides of the bowl with a rubber spatula and beat the egg in.

Step 7: Adding Your Flour

Scrape the bowl again, and add the flour mixture. Mix on low speed until the dough comes together. It will be a little sticky when finished. Before you roll your cookies, chill your dough in a fridge for at least 25 minutes.

Step 8: Molding, and Sugar Coating Your Dough

Place the remaining 1/2 cup sugar in a shallow bowl. Pinch off the dough by the tablespoonsful, shape them into balls, and roll them in the sugar to coat them.

Step 9: Placing Your Cookies

Place your dough balls 2-inches apart on the prepared baking sheets.

Step 10: Stamping and Cooking Your Cookies

Using a flat-bottomed glass, flatten the dough balls to about 1/4-inch thick. Make sure you don't squish them too much, or they will be really thin!🙂

Bake them for 9 minutes, they should appear golden on the bottom but still a little pale on top.

Step 11: Topping Your Cookies

Place a small amount of chocolate chips, and a large marshmallow onto the cookies. Then place them in the oven for 3 more minutes so that the marshmallow will soften and settle. Remove them from the oven, allow them to cool one minute before sprinkling the crushed graham crackers on.

Step 12: Enjoy!!
