Introduction: Sourdough Fruit Loaf (similar to Russian Easter Bread)

Russian Easter Bread is a traditional bread made and enjoyed at Easter.

We've made this bread using a healthy sourdough base and filled with fruit and spices. Finally, a soft lemon icing is poured over.

Let's get started.

Step 1: Ingredients

You will need:

  • 250 grams (8.82 oz) of flour
  • 45 grams (1.59 oz) of sugar
  • 25 grams (0.88 oz) of almonds
  • 20 grams of crystallized ginger
  • 1/4 teaspoon of turmeric
  • 1/2 teaspoon of salt
  • 100 mls of Sourdough Starter
  • 60 grams (2.12 oz) of butter
  • 30 grams (1.06 oz) of raisins
  • 1 tablespoon of fresh ginger
  • 2 teaspoons of wine (we used Apple Core Wine)
  • 2 eggs

Step 2: The First Ingredients

Put the flour, sugar, almonds, chopped crystallized ginger, turmeric and salt into a mixer bowl. Use a hand whisk to quickly whisk the dry ingredients together.

Step 3: Sourdough Starter

Add the sourdough starter into the bowl then prepare the raisin mix in the following step.

Step 4: Ginger and Raisins

Place the fresh ginger and raisins in a bowl and add apple core wine and mix.

Step 5: Mixing

Give the dough a mix with the dough hook attached to your mixer. Then pour the raisin and ginger mix into the bowl and add the lightly beaten eggs. Allow to mix through.

Step 6: Ferment the Bread

Move your dough into a new bowl and cover with a damp tea-towel. Leave this in a warm place for over night for the ferment to work through.

Step 7: Ready to Bake

Put the fermented dough into a tin and cook for 60 minutes or until lightly brown.

Step 8: Icing

Now for the exciting bit. Make up a quick icing by combining some icing sugar with water and lemon juice. Mix until you have the desired consistency.
