Introduction: Strawberry Cheesecake (No Bake)

Cheesecake is often served in my household not just for birthdays, Thanksgiving, Christmas, etc, but also for just because :)

While baked cheesecakes are so mouthwatering, the no baked ones are as great and much easier to make especially in summer where you don't really want to turn on the oven and heat up the house ;)

Step 1: Ingredients and Method

Base

15 chocolate wafer cookies

1 tbsp sugar

2 tbsp softened butter, melted

halved strawberries, as needed

Cheesecake

1/2 cup heavy cream (35 %)

2 envelope gelatin, unflavored

3 cream cheese, softened to room temperature

3/4 cup sour cream

1 cup sugar

2 tsp vanilla extract

1 tbsp freshly squeezed lemon juice

3 tbsp strawberry/raspberry jam

red food coloring (optional)

Melted Chocolate 1 cup chocolate chips

butter as needed

Base: In food processor, crumble cookies; dump into 8 inch springform pan, add in melted butter and sugar, mix well then press to the bottom of the pan. Preheat oven to 350 F, bake base for 5 minutes, cool. Once cooled, line halved strawberries on the side of the pan.

Cheesecake: Place heavy cream in saucepan, sprinkle with gelatin evenly, let stand for 5 minutes; then heat for 2 minutes.In a bowl, place cream cheese, beat with your mixer for 2 minutes then pour in melted gelatin, sugar, and the rest of the ingredients, beat for 1 minute. Take 2 1/2 cup batter, pour into the pan. Mix jam and food coloring with the rest of the batter then top the white batter. Chill for 4 hour; decorate with melted chocolate

Melted: On a double boiler, melt choc chips with a little butter and drizzle nicely ontop of cheesecake
