Introduction: Yerba Mate Cake

I’m a yerba mate lover.
I was searching for a cake that was light enough and quick to prepare, and I found the water cake.
Here I had the inspiration to modify this cake in order to make mine according my taste, and I’m happy to say you that has been a success!
Yerba mate cake is easy, quick to prepare and it could be also savored by vegan people.

It’s a friendship cake for those reasons, I haven’t called it this way because it’s the name of another cake that already exists. So, I hope you will appreciate! In this case, thank you if you would vote for me in breakfast contest, because I tried it as cake for breakfast and it’s a pleasure to start a morning with a piece of this cake!

Step 1: Ingredients

All that we need is:

  • 330 ml of natural water
  • 5 tbsp of yerba mate
  • 300 g of flour "00"
  • 200 g of brown sugar
  • 16 g (one packet) of baking powder for cakes
  • 90 g of seed oil
  • a teaspoon vanilla (optional)

Step 2: Let's Start With Mate!

Heat all the water up to 70 degrees (when bubbles begin to form on the bottom of the pot) and pour the mate, turning a spoon to mix yerba mate and water.

Step 3: Two Main Ingredients

Wait until the water becomes cooler, then filter the yerba mate from the water with a filter, in another bowl.

At this point, add the baking powder to the flour and mix together, so sift the flour.

Step 4: Become Sweet and Oily

Add the brown sugar to the yerba mate, the add the teaspoon vanilla, and mix them together, until you obtain a homogeneous liquid.

Then, add the seed oil, and switch on the oven at 180 degrees in order to warm it.

Step 5: Mix Our Two Cauldrons

Then add the flour, a tablespoon at a time, and mix it with a whisk, to avoid creating lumps.

Step 6: Bake It!

Use margarine to grease a baking dish and cover with the flour; you could also use baking paper, or butter instead margarine, but we're making a cake that could be eaten also from a vegan, so I use margarine.

Pour the mixture prepared into the pan and bake at 180 C° for 30-40 minutes.

Step 7: It Is Cooked?

Do the toothpick test after 30 minutes of cooking; if stabbing the cake, the toothpick remains dry, is ready and we can take it out of the oven!
It could have a color like in the picture!

So, wait some minutes to make it a bit cooler, then put it in a dish, and decorate with icing sugar, if you want...I prefer without!
