Introduction: Honkey Taco

About: My full time job as an Organ Grinder keeps me pretty busy but that's just small change. My part time work, as a Mohel, keeps me up to date on my student loans from UCLSD.

I always wanted a hot dog cart BUT being a kid from So. Cal. & of Sonora values, I"d call my cart "Honkey Taco."

Once on a job site, ran by a fine figure of a Texan, I made the only cross comment I could about Texas, and that was, "I don't know what happened but, Tex-Mex just sucks!"

The response....... "Who ever heard of a @#%&* fish taco?"

And the on next day, I produced in my home, to the best of my ability, with the warmth and kindness I'd been showed and bestowed my entire life, fish tacos for my Texan visitor and, we then gained another fan!

This particular fish taco is of Baja, Califas in origin (excluding the black beans and rice of my own concoction) using a white rock fish, BUT Uncle Ben's Beer Battered Fish is a quick simple answer.

Step 1: The Goods!

regular or mango salsa

lemon or lime

flour tortillas

Uncle Ben's fish fillets or battered "cow cod" lol

cabbage "cole slaw mix"

mayo (or tarter sauce)

Step 2: Prep'in the Goods to Serve

Cook your fish (mine was store purchased "fish stix" being the simple way out), rice and beans. Chop up the cabbage (cole slaw mix), slice up limes and lemons, and set everything accordingly to assemble. You almost cannot mess up, even if you do, just shoot from the hip.

The best thing about Mexican food is: What you have AND what you can make of it. Now, go take on that dish.
