So rich, so good, melt in your mouth soft cookies!
Step 1: Ingredients and Method
2 1/2 c flour
1 tsp soda
a pinch of salt (1/2 tsp)
1 c cooking oil
1 c dark brown sugar
1/2 c sugar
2 tsp vanilla essence
1 tsp pure almond extract
1 generous cup mini chocolate chips
Preheat oven to 350 F
Stir together the flour, baking soda and salt; stir to combine, set aside.
In a mixer, beat the vegetable oil, brown sugar and white sugar until smooth and cream. Beat in eggs one at a time, then stir in the vanilla and almond extracts.
Stir in dry ingredients follows with mini chocolate chips
Drop by a tbsp onto ungreased cookie sheets and Bake for 8 to 10 minutes
Cool on racks
NOTE: If you have enough cookie sheets, you can let cookies stand on the sheet for 5 minutes before placing on racks for a little firmer cookies. However, for soft melt in your mouth cookies, once out of the oven, cool cookies on rack (gently).
