Introduction: Mini Corndog With Bonus Cornmeal Pancake Recipe

Even though I don't have kids myself, I have a lot of nieces and nephews, and they all love me so much -- because I will always make them snacks when then visit me! Among all the snacks, this Mini Corndog is their all time favourite, and it'll be such a nice snack to give to kids after school. Also I have a bonus recipe of a cornmeal pancake, so you WON'T WASTE ANY BATTER. Two snacks out of one recipe, how good is that.

This recipe is not just for kids only, adults love them too, but a regular size sausage might suits them better - they will finish these in no time before you will even notice.

Also this is my first video Instructable as well, the steps are very clear but video will give you a better understanding of the movement and workflow.

Supplies

Tools you will need:

Mixing Bowl

Whisk

Glass cup

Skewers

Pot (or deep fryer)

Step 1: Ingredients

For the ingredients, you will need:

Plain flour 155g

Salt 5g

Cornmeal 120g

Sugar 50g

Baking Powder 4g

Eggs 2ea

Milk 180g

Mini sausage (cooked) 10ea

Please note that all the sausages for corndog need to be cooked. The ones I bought are already cooked, but if your sausage is raw, please cook them according to the package instruction first (boil for 3-4 min or so).

You will also need a little bit spare milk for later.

Step 2: Mix Your Batter

1. Take a mixing bowl, put all the dry ingredients in (Flour, cornmeal, salt, sugar, baking powder)

2. Use a whisk to combine all the dry ingredients together evenly (It's a little bit hard to get a clear screenshot of this step as my whisk is constantly moving. Please refer to video to see the mixed dry ingredients)

3. Add in your milk and egg.

4. Whisk again till it forms a nice and thick batter. However if your batter is too thick/too thin due to different brand of flour water absorption, you can add a bit extra milk/flour to adjust it.

Step 3: Prepare Sausages

1. At this time you can start to heat your oil with medium high heat, as the oil needs some time to heat up. If you use a deep fryer, please adjust your time based on your machine.

2. Put the batter into a tall glass cup, this will make it so much easier for dipping.

3. Put a skewer into each of your sausages. Prepare all of them so you won't rush when deep frying.

4. Dip your sausage in the batter, and take it out, it should be very evenly coated.

Step 4: Deep Fry Your Corndog

1. Heat your oil to 180°C (350°F). If you don't have a thermometer, just dip a little bit batter and put in the pot. The batter should bubbles right away when you put it in, this is also a good indicator that your oil is hot enough and ready for deep frying.

2. Now put your corndogs into the oil. I cooked mine for about 1-2 min each, but your cooking time might vary depends on the size of your pot and the size of your sausages as well. If you cook a regular size corndog, it might need about 1-2 more minutes. Just fry it till golden brown - that's the best indicator for your corndog is ready.

3. Take them out from the pot, and rest them on a kitchen towel to absorb extra oil. But a successful corndog is not greasy on the outside at all, as you can see in the video the outside is quite dry.

Step 5: Don't Waste Your Batter... Turn It Into Cornmeal Pancake!

Now your corndogs are done and they look delicious, but everytime after making corndog, you will most definitely have some batter left. Throw them out? NO! Turn them into delicious mini cornmeal pancakes and the kids love it too! Or you can save the batter to make pancake for the next day's breakfast.

Bonus mini cornmeal pancake recipe:

For each 100g batter left,

add about 17g milk.

1. Mix in the milk till the batter is thinner and runnier.

2. Pour the batter on heated non-stick pan.

3. Wait till it bubbles, then flip side.

4. Normally it will take 1-2 min each side but still, time can vary depends on your stove, pot and the size of your pancake. So use the color and bubbles as your indicators.

Step 6: Presenting to the Kids (or Yourself)

To make sure the kids also have some veggies, I roasted a corn and rubbed a little bit butter on top while it's hot. Then chop the corn into chunks.

On a plate, present your creations:

Mini corndogs, ketchup, mini cornmeal pancakes with a little bit butter, roasted corn, and some maple syrup for the pancake (in the photo and video I used a homemade syrup but maple syrup is just simply the easiest).

And Viola! The kids (and adults) will love you for this.

Step 7: Enjoy!

Dip your corndog in ketchup or other sauces you like, the dough is crunchy but also soft on the inside, with a nice taste of cornmeal. Eat your pancake with maple syrup as a little "dessert" to finish off this nice snack plate.
