Introduction: Easy Vegan Mash (better Than Potatoes!)

About: Shiny is my favorite color. Blissfully living the American dream i never even believed in.

First off, I will preface this by saying , i am not a vegan.. and if asked I would have said I NEVER eat anything vegan.. but the other night while making dinner, i realized i DO eat this mash quite often in place of potatoes. Not only is it healthier, but its more flavorful. When i first introduced this to the family.. i made it more mild,and smashed all the beans completely. And let them think it was potatoes until after the meal. Everyone likes it.. and now i can adjust the seasoning according to what we are having it with and who is eating (son doesn't eat spicy)

Step 1: Assemble Ingredients:

base of the mash is cannellini beans (canned) and olive oil.

All seasonings can be modified, my go-to seasonings are

oregano

basil

garlic

shallot

onion

thyme

crushed red pepper (when son isn't eating with us)

salt and pepper

Step 2: Mince

I mince the garlic onion and shallot to make it a smoother mash.

i personally use (per can of beans):

2 tbs onion

1tbs of garlic

1tbs shallot

1 tsp each thyme, basil,oregano

1/2 tsp red pepper flakes

Step 3: Cook These in Olive Oil

add all the herbs and aromatics to a tbs olive oil and cook until they start to soften.

Step 4: Rinse and Drain the Beans

and add them to the pan. .let this cook together for at least 5 minutes.. but up to 30 if u want..just add water as needed. then mash with a potato masher, fork, or whatever you prefer. I like mine a little lumpy, but as i stated in first step, when i originally made them i fluffed them up like potatoes and added a lot less seasoning and pawned them off as potatoes to the son. He tends to make up his mind about a food before he tastes it, which drives me crazy xD
