I just wanted to share one of my all-time favorite recipes with you - it's an Indian-style Spicy Potato Fry that I used to enjoy growing up. This dish is not only super delicious but also incredibly easy to make. It's perfect for those evenings when you need a quick snack to pair with your tea.

What I love most about this recipe is how it's packed with aromatic Indian masala spices, giving it a burst of flavor in every bite. Of course, you can always adjust the spices according to your personal preference.


Supplies

  • 1 tbsp ginger-garlic paste
  • 2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 2 tsp coriander powder
  • 2 tsp salt
  • 2 tbsp corn flour
  • 1 tsp peri peri powder
  • 3-4 medium-sized potatoes
  • 2-3 tbsp oil

Step 1: Prepare the Spice Paste

In a large bowl, combine the ginger-garlic paste, red chili powder, turmeric powder, coriander powder, salt, corn flour, and peri peri powder. Gradually add water, stirring continuously until a paste-like consistency is achieved.

Tip: For a spicier kick, adjust the amount of red chili powder and peri peri powder to your liking.

Step 2: Coat the Potatoes

Peel and slice the potatoes into even-sized pieces. Add the potato slices to the spice paste, making sure to coat them evenly.

Tip: Thinner slices will result in a crispier texture, while thicker slices will provide a softer interior.

Step 3: Fry the Potatoes

Heat 2-3 tbsp of oil in a large pan over medium heat. Once the oil is hot, carefully place the coated potato slices in the pan. Fry the potatoes until they are golden brown on one side, then flip them over to cook the other side evenly.

Adjust the heat as needed to prevent burning and ensure even cooking.

Step 4: Serve and Enjoy

Once the potatoes are cooked and crispy, remove them from the pan and place them on a plate lined with paper towels to absorb any excess oil. Serve the spicy potato fry as a delicious snack, either on its own or with your favorite dipping sauce.
